3 Quick & Easy Camping Meals - What We Eat in a Day While RVing (Minimal Dishes!!)

We wanted to share 3 of our favorite meals to cook while RVing. They are all quick, easy, and use minimal dishes which is always a bonus while camping! We have shared what we eat in a day while RVing including a breakfast, brush, and dinner. First, I make shakshuka for brunch which is a spicy tomato sauce that you poach eggs in. Then I make our favorite soup, pumpkin curry coconut. If you have never tried a pumpkin soup before, you have to try this one! Later that night, I also prepare our go-to breakfast for check out days, overnight oats. This is a great option for check out days because you mix together the ingredients the night before, leave it in the fridge, and it's ready to go for you in the morning without having to cook a thing.
