Scrambled Tofu Burrito (1-2 servings): 1 large flour tortilla or dürüm 1 handful of cooked red or black beans 1 avocado Juice of 1/2 lime Mexican salsa verde (optional) Salt & pepper Scrambled Tofu: 1 medium potato 1 shallot or 1/4 onion 150g natural firm tofu 1 good pinch of turmeric 1-2 tbsp sweet soy sauce Salt & pepper Olive oil Overnight Porridge & Peanut Ganache (1 serving): Porridge: 40g instant oats 150g plant-based yogurt 3 tbsp plant-based milk 1 scoop of vegan protein powder (30g) (I use Sync Vanilla or Apple Pie) 1 tbsp Chia Seeds Ganache: 2 tbsp Peanut Butter 2-3 tbsp Plant-Based Milk 1 tsp Maple Syrup or Agave Syrup 👉🏼 Let it rest in the refrigerator for at least 2 hours or overnight. "MOLLETE" STYLE TOAST: Bean Purée (for 4 toasts): 200g cooked black or red beans 1 tsp oregano 1/2 tsp onion powder 1/2 tsp garlic powder 1 pinch of chili powder 1 tbsp hot sauce (optional) Salt & Pepper Slices of rye bread Toppings: Pistachios, vegan cheese, cilantro, avocado, hot sauce, etc. WEETABIX CHEESECAKE (1 person): 120-140ml plant-based milk (if using protein: 2/3 milk + 1/3 water) 2.5 Weetabix 1 scoop of protein powder (I use Sync Red Berries) 200g vanilla-flavored plant-based yogurt Vanilla-flavored plant-based yogurt Strawberry & Peanut Butter topping 👉🏼 Let it chill in the refrigerator for at least 1 hour or overnight.
