Add a small drizzle of oil to the chicken. Season the chicken with cajun seasoning on all sides. Cook the chicken with the skin side down. Cook for a total of 20 minutes, 10 minutes on each side. Remove and set aside for later. In the same pan, add the turkey ham or sausage. After the meat has been cooked, add the vegetables, ex: onions and bell peppers. After 30 seconds, stir in the chopped garlic. Combine the rice with the other ingredients. Add Cajun and Creole seasonings to the rice. Add the chicken broth and stir. Add parsley and a spritz of lemon juice. Reduce the flame to low and allow the rice to come to a slow simmer. Return the chicken to the pan and cover with a lid for 15 to 20 minutes on the stovetop. Oven- cover with a lid and place the pot into the oven @ 350°F oven for about 20 to 25 minutes until the chicken is cooked all the way through and the rice and the rice becomes fluffy. Garnish with parsley and lemon. Sauce - Add melted butter, Cajun seasoning, lemon juice, chicken bouillon, parsley and combine. Add the sauce to the chicken and add any remaining amount of sauce to the rice. Serve on up and Enjoy!!
