I get an urgent call from El Rulo. He's been given time off from work and wants to meet up to take me to a remote spot in the Borbotó orchard that very few people know about and where they make one of the best horse meat sandwiches in Valencia. El Rulo doesn't say no, so we meet at Trinquet de Borbotó. His humble bar returns to purism for lunch: a lovely covered terrace in the middle of the orchard, with produce from the same lunch-makers from the villages surrounding his small fields. Good produce, even better service, good food, and horse accompanied by fresh, local produce that makes you believe again in an authentic and pure lunch, without frills, without sauces, just pure produce.
