[Chilled Brown Rice Tea Porridge] Brown rice: 1 cup (soaked for at least 6 hours) Water: 1L Roasted green tea (tea bags): for 2L *Put everything in a pot and cook until the brown rice becomes tender. If the liquid reduces too much during cooking, add more water as needed. (I personally like it when it’s quite soupy.) *Chill thoroughly in the refrigerator. [Simmered New Ginger] New ginger: 80g Shredded kombu: 10g Bonito flakes: 10g Dried tiny shrimp: 1 and 1/2 tbsp Sake: 100ml Mirin: 50ml Soy sauce: 80ml Sugar: 3 tbsp [Mint and Lemon Syrup] Mint: 10g (half substituted with lemon balm) Lemon juice: from 1/2 lemon Water: 300ml Raw cane sugar: 150g [Grape Kanten Jelly] Water: 400ml Sugar: 70g Powdered agar: 4g Grapes: as needed Mint and lemon syrup: as needed *Heat the water and powdered agar over the stove, and once it comes to a boil, continue boiling for about 2 minutes. *Add the sugar and stir until dissolved. Pour into a mold that has been moistened with water, then chill in the refrigerator until set. *Cut into your preferred size, serve with grapes, and drizzle with syrup before eating.
