Ingredients 材料: Small Fresh Abalone 鮮鮑魚仔 – 6-8 pcs 隻 Bean Vermicelli 粉絲 – 150 g 克 Garlic 蒜頭 – 1 bulb 個 Red Chilli 辣椒 – 1 pc 隻 Salt 鹽 – to taste 適量 Ground Black Pepper 黑椒碎 – to taste 適量 Dried Tangerine Peel 陳皮 – to taste 適量 Cooking Oil 食油 Butter 牛油 – 1 small lump 小塊 Scallion 蔥 – for garnish 適量裝飾用 Parsley 番茜 – for garnish 適量裝飾用 Instructions 烹飪步驟: 1/ Thoroughly clean the whole abalone with brush & knife under running water 將鮑魚仔以刷及刀徹底洗刷清潔 2/ Gently separate the meat & shell with a spoon Remove intestines & wash off the dirt 以匙羹輕輕將鮑魚及殼分離 取出內臟穢物後沖刷乾淨 3/ Soak vermicelli in tap water till soft Drain them & set aside 以水將粉絲浸至軟身後瀝乾水份備用 4/ Peel & mince garlic 切好蒜茸 5/ Chop chilli & thinly slice dried tangerine peel that is softened by soaking in water beforehand 將辣椒及預先浸軟後的陳皮切絲 6/ Place vermicelli in steaming plate & arrange abalones on top 將粉絲平鋪於蒸煮用碟上再排好鮑魚 7/ Heat oil in a pan. Add in half portion of minced garlic, butter Sauté till golden crispy 把油加熱後放入半份蒜茸及牛油 爆炒至香脆金黃 8/ Top abalone & vermicelli with crispy garlic & oil, chilli, tangerine peel & remaining minced garlic 將炸蒜茸連油、椒絲、陳皮絲及生蒜茸 灑放於鮑魚及粉絲上 9/ Add water over vermicelli 淋灑適量水於粉絲中 10/ Season with salt & ground black pepper 加入鹽、黑椒碎調味 11/ Bring water to boil & steam in high heat for 6 mins 把水煮滾,加蓋大火蒸煮6分鐘 12/ Sprinkle chopped scallion & parsley for garnish 灑放蔥粒及番茜裝飾 13/ Add depth to your dish by drizzling on a little sesame oil with a nutty aroma 淋灑少量麻油以增添香氣及提升味道層次 Ready to serve! 完成!上枱! #cooking #learn how to cook #home helper #domestic helper #Indonesian
