Genetics, meaning the tomato variety you've chosen, is the primary factor determining a tomato's ripening time. If you're wondering why your neighbor has bright red tomatoes while yours remain stubbornly green despite growing in identical conditions, the answer is quite simple: they planted an earlier-maturing variety than yours. Each variety has a genetically programmed ripening time that varies from 60 days after planting for early varieties to 120 days for late ones. This timeframe is often specified on the label in good garden centers; otherwise, you can easily find it on the website I'll mention later. The perfect weather for tomatoes is 15-16 degrees Celsius at night and 24-25 degrees Celsius during the day. Below 10 degrees Celsius and above 30 degrees Celsius, the plant simply stops growing. So, if you have a week of extreme heat at 35 degrees Celsius or a week of cold at 10 degrees Celsius, you can add all those days to the stated ripening time. For example, you planted a very early tomato variety that's supposed to ripen 60 days after planting, but you experienced a week of cold weather in May and a week of extreme heat in June. Well, your very early tomato, which was supposed to ripen in 60 days, will now take 74 days (the 60 days genetically predicted plus the two weeks of unfavorable weather). Why does a tomato ripen? A tomato ripens (it usually turns red, but tomatoes come in different colors) when it reaches maturity, meaning the seeds inside are ripe and ready to produce new tomato plants. It's important to remember that a fruit is simply bait created by plants to encourage predators to disperse their seeds. So, a green tomato looks like a ripe one, but it isn't! When the seeds are ripe, the plant begins to produce a gaseous hormone, ethylene, through its sap, which triggers ripening. As soon as ethylene is produced in sufficient quantities, a transformation occurs! The tomato develops its beautiful colors (the famous red pigments of lycopene, blue anthocyanins, or yellow-orange carotenoids), becoming softer, sweeter, and more fragrant! Ethylene is therefore the key element in tomato ripening, but only the genetics of the variety determine how quickly the tomato produces this ripening hormone. So, which varieties should you choose to enjoy tomatoes from your garden starting in mid-July? Ideally, you should plant varieties whose ripening dates will extend throughout the season. Even if you love Beefsteak or Black Krim tomatoes, it would be a shame to plant only one variety of tomato in your garden. The ideal selection is at least one variety for each maturity level: an early, a mid-early, a prime, a mid-season, and a late variety. This means you should have at least five varieties of tomatoes in your garden to ensure you always have at least one in full production from July until the first frost.
