Tutti Frutti sponge cake Cake Ingredients 3 eggs (room temperature) ½ cup powdered sugar ½ cup oil 1 tsp vanilla essence 1 cup all-purpose flour (maida) 1½ tsp baking powder  4 teaspoon tutti frutti Oil for greasing the cake pan A little flour for dusting the cake pan Method Preheat your oven to 180°C. In a large bowl, beat the room-temperature eggs with the powdered sugar until the mixture becomes light, fluffy, and creamy. Add the oil and vanilla essence. Mix for only 3 seconds. Sift the all-purpose flour and baking powder together into the batter. Gently fold the dry ingredients into the batter using light strokes. Do not overmix. Fold in the tutti frutti until evenly distributed. Grease a cake pan with oil and dust it lightly with flour. Pour the batter into the prepared cake pan and level the top. Bake at 180°C for 32 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and cover it with a clean kitchen towel to help retain its moisture. Let it rest for 15–20 minutes. Carefully remove the cake from the pan, allow it to cool completely, then slice and enjoy your soft, delicious Tutti Frutti Pound Cake!
