There are dishes that taste good, dishes that matter, and dishes that alter the emotional climate of a dining room. Some of those dishes are highly charged, erotic in every way. Marco Pierre White’s Tagliatelle with Oysters and Caviar is that kind of dish. When it first appeared on the menu at Harvey’s in 1980s London, it did not ask for approval. It simply announced itself. Pasta slicked with butter. Oysters warmed just to the point of surrender. Caviar used unapologetically. Cucumber, of all things, softened and gently persuaded into sweetness. French technique with Italian instinct, filtered through a young British chef who had decided reverence was overrated and pleasure was the whole point of food like this.
