Catch, gut, fillet, and refrigerate salmon trout (in a cooler). The fillets can be vacuum-sealed and frozen for up to 6 months. 2. Prepare a brine and marinate the fillets in it. Dissolve 100 g of salt per 1 liter of water and marinate for 60–90 minutes. or Add 60–70 g of salt per 1 liter of water and marinate overnight. 3. After marinating, rinse the fillets thoroughly with cold water, let them drain, and pat them dry thoroughly (with a sterile towel or kitchen paper). 4. Fill the smoke generator (special Kaiser) with fine sawdust so that four burning spots are visible. Press the smoke dust firmly into the brine. Light the areas with a windproof lighter, a gas blowtorch, or a blowtorch. Place the fillets in the smoker and open all the smoker doors to create some draft. 5. Remove bones and cut the fillets into strips. 6. Line the smoking racks with parchment paper and place the strips on them. Trim the parchment paper to allow the smoke to circulate. 7. Sprinkle FTM Stremel Salmon Seasoning over the fillets – not too much. 8. Place the racks with the fillets in the oven and bring the temperature to about 75°C. 9. After about 20 minutes, turn off the heat. The remaining heat is sufficient to cook the fillets. The smoke will last for about 3 hours thanks to the generator. 10. After about 3 hours, the smoke should have permeated and the temperature should have dropped to around 30°-40°C – this depends on the ambient temperature. In winter, I like to smoke in the evening and let the fillets cool overnight. In summer, this isn't possible!
