A HEARTY 'RIBS' STEW: THE PERFECT SUNDAY COMFORT FOOD⎜VEGAN
This hearty stew is one of Brazilian treasures. It is originally from the state of Minas Gerais and its made from ribs but in this case, I have found a perfect substitute for it: Oyster mushrooms, that due to their extreme heartiness and shredability, makes it the perfect ribs substitute. The ingredients are easy to get and its ready in no time! Per-fection! A HEARTY 'RIBS' STEW: THE PERFECT SUNDAY COMFORT FOOD, VEGAN INGREDIENTS: 400 g (14.1 oz) of oyster mushroom, shredded 500 g (18 oz) of raw frozen cassava, yuca, manioc) 1 medium onion, diced olive oil 3 tablespoons of soy sauce 2 tablespoons of tomato pure 600 ml of veggie broth (or more, if needed) salt to taste black pepper to taste 1 teaspoon of dried parsley 1 teaspoon of garlic powder or 3 cloves of garlic, minced 1 medium red bell pepper, diced fresh parsley CUPS MEASUREMENT: 1 CUP: 250 ml 1/2 CUP: 125 ml 1/3 CUP: 83 ml 1/4 CUP: 62 ml METHOD: Add olive oil to a skillet on medium heat, when hot, add the shredded mushroom and the soy sauce. Stir and let it brown. Add olive oil to a thick pot, on medium heat, when hot add the onions, stir until golden brown. Add the tomato pure, stir for 3 minutes, add the red bell peppers, sauté them for 3 minutes. Add the remainder of the ingredients except the parsley. Turn the heat to medium low and let it cook for approximately 20 minutes. This time will vary according to the cassava you're using. The stew is ready when the cassava is cooked through. We are looking for a soft but firm cassava. If you cook it too long it will disintegrate and your stew will be really thick. You may need to add some more water along the cooking.
