Cocada Amarela Brûlée de Moça
La receta de hoy es una reinterpretación de una receta tradicional portuguesa, a la que he dado un formato diferente y he modificado su proceso de elaboración. Además, he fusionado influencias de otras versiones, particularmente la brasileña, para crear mi propia versión de la "Cocada Amarela", que he llamado "Cocada Amarela Brûlée de Moça". La Cocada Amarela es un postre típico de origen portugués, probablemente originario de la región de Algarve, famosa por su repostería basada en yemas de huevo y azúcar, como muchos de los tradicionales dulces conventuales de Portugal. El nombre "amarela", que en portugués significa "amarilla", hace referencia al característico color vibrante del postre, que se debe a la generosa cantidad de yemas empleadas en su preparación. Un bizcocho de yemas y coco, muy almibarado, decorado con baba moça con azúcar azúcar demerara por encima que posteriormente se carameliza, creando un acabado tipo crème brûlée. A la hora de servir, lo acompañé con yogur griego sin azúcar, crème fraîche o nata semi-montada, decorado con flor de osmanthus y más baba de moça al gusto.
