Strawberry Cheesecake Bars - Fresh Strawberry Jam

You can also find me here: INSTAGRAM:   / jonny.photos   FACEBOOK:   / kitchenwithjonny   TWITTER:   / jonnymejia23   INGREDIENTS Strawberry jam recipe: 1 lb strawberries 1 cup of white sugar zest of 1 lemon Graham cracker crust: 14 sheets of graham crackers 8 Tbsp of butter, melted Cheesecake filling: 2 (8 oz) packages of cream cheese, softened 2/3 cup cups of white sugar 2 tsp vanilla extract 1/4 cup sour cream 2 large eggs INSTRUCTIONS 1. Make strawberry jam first. In a blender add cut and washed strawberries. Blend until it’s a purée. 2. In a medium saucepan over medium heat, add strawberry purée, sugar and lemon zest. stir until sugar is dissolved. allow to come to a simmer. lower the heat to low and cook for 15-20 minutes. remove any foam on top with a spoon during it cooks.Add the jam to a bowl and allow to cool. 3. In a medium size bowl, combine crushed graham crackers and melted butter until it resembles wet sand. press down the cookie crumbs on a 9x9 inch square pan that’s been lined with aluminum foil. place it in the fridge until you are ready to used it. 4. In a large bowl, add softened cream cheese, sugar and vanilla. using a hand electric mixer, mix until everything is well combined and smooth with no lumps. add sour cream and mix until combined. mix in the eggs one at a time. pour cheesecake mixture over the cookie crust. spread evenly with a spatula. 5. Spoon the strawberry jam on top of the cheesecake, a few dollops at a time. Use a skewer or knife to swirl the mixture as much or as little as you'd like. I used like 1/2 cup of jam. 6. Bake cheesecake at 350 degrees F for 30 minutes. once it’s baked, allow it to cool for 30 minutes on your counter. place in the fridge until it sets; 2-3 hours. cut them into squares. i added more jam on the side.
