Ingredients: For the pork tenderloin: 500g pork tenderloin Olive oil to taste Salt to taste 2 cloves of garlic 1 sprig of thyme 1 sprig of rosemary 1 heaping tablespoon of unsalted butter For the broth: 1 onion 1 carrot 1 head of garlic Spinach stalk 1 leek 1 bunch of parsley 1 bunch of chives 3 bay leaves Rosemary to taste Thyme to taste For the risoni: 1 onion 3 cloves of garlic 1 tablespoon of unsalted butter 200g risoni pasta 1 lemon 200ml fresh cream Parmesan cheese to taste Leaves of Spinach Black pepper to taste Salt to taste Olive oil to taste Preparation Method: For the broth and risoni: Roughly chop the carrot, onion, and leek. In a large pot, mix with the remaining ingredients. Add potable water to cover. Cook over low heat for at least 1 hour. Once cooked, strain and reserve the liquid. In a pan, sauté the onion and garlic in olive oil and butter. Add the risoni and mix well. Gradually add the broth to the risoni until it reaches the al dente stage. Add lemon zest, fresh cream, Parmesan cheese, spinach leaves, salt, black pepper, and mix well. Set aside. For the pork tenderloin: Season the pork tenderloin with salt and black pepper. In a hot pan, add olive oil and butter, and sear both sides of the meat. Add more butter, the garlic clove, thyme, rosemary, and generously baste the meats until they reach your desired doneness. To serve, simply arrange the risoni on a platter, place the meats on top, and finish with parsley and lemon slices.
