Welcome to a summer day in the life of a mom of 8! 🌿 Today I’m sharing a cozy day at home in our 120-year-old Victorian house. Come along as I bake fresh bread, make gluten-free muffins, spend time with the kids, and work through the everyday rhythms of homemaking and motherhood. Do your stretch and folds throughout the day until your dough passes the window pane test. Slap your dough down spread out and fold like envelope, then form into a ball, place it into your floured banneton basket, cover and let rise. Then place dough in your fridge overnight, it needs to cold proof for 12-18 hrs. *next day, place your Dutch oven into your oven at 450 while oven preheats. Once your Dutch oven is hot and smoking, take out your cold bread loaf, score it, place on parchment paper, lower into your hot pan, add a couple ice cubes, place lid on, and bake for 20 min. After your 20 min, take off lid, lower your oven temperature to 375 and bake for 30 more minutes or until your instant read thermometer reads 200 degrees. Slice and enjoy! 🤍Gluten free banana protein muffins Ingredients 2-3 mashed bananas 1 egg 1/4 cup maple syrup 1/4 cup avocado oil 1tsp apple cider vinegar 1/2 tsp salt 1/2 cup almond flour 1/2 cup gluten free flour 1/2 cup chocolate protein (or protein of choice) 1/2 tsp baking powder *mini chocolate chips Method Add wet ingredients then mix in dry ingredients, grease a muffin pan or add muffin liners, add your batter. Bake at 350 degrees for about 20 minutes or until toothpick inserted comes out clean.
