The result is *firmer and more bouncy* than versions made with rice flour or starch, which would create a smoother, more cake-like texture. *Ingredients* **Red beans**: 100 g **Water chestnut flour**: 100 g **Water**: 200 ml **Sugar**: added during cooking **Coconut milk**: 165 ml **Cooking oil**: a little, for the mold *Main Steps* *Soak the red beans in advance* until they are swollen but still slightly firm. *Mix the water chestnut flour with water* and *strain it* to make the batter smoother. *Boil the soaked red beans and the soaking water* together. *Add sugar* once the mixture is close to boiling, stirring until fully dissolved. *Stir the flour mixture well* before adding the red bean liquid, so the flour does not settle. Add part of the red bean liquid to the flour mixture, then **stir in the coconut milk**. Pour the batter into a *heat-safe glass container* that can be used for steaming, and lightly grease it with oil. *Steaming and Cooling* Steam the mixture for about *30 minutes* over **medium-high heat**. After steaming, **pour off any surface water**. Let the cake *cool completely* before removing and cutting it. For easier unmolding, run a knife around the edges and turn it out carefully. *Final Result* The cake turns a *brownish-red color* with visible red beans. The texture is **firm, bouncy, and slightly chewy**. The coconut flavor is **light and fragrant**. *Notes* The red beans should be soaked long enough to soften properly. Using the correct container is important to avoid breaking during steaming. If a softer, smoother texture is desired, other flours can be mixed in, but this recipe keeps it simple with only water chestnut flour.
