Click here for the recruitment form: https://www.sanpi-ryoron.com/recruit/ Chicken and Lotus Root Fish Ball Hot Pot (Serves 2-3) *Made by Masahiro Kasahara [Ingredients] 300g ground chicken thigh, 200g lotus root, approximately 5 mitsuba (Japanese parsley), 1 scallion, 4 shiitake mushrooms, 2 fried tofu (deep-fried tofu), 1 pack enoki mushrooms, a pinch of yellow yuzu, a pinch of black pepper, a pinch of salt A (2 teaspoons sugar, 1/2 teaspoon salt, 1 tablespoon soy sauce, 1 teaspoon grated ginger, 1 tablespoon potato starch) B (1L water, 200cc sake, 5g dashi kombu (kelp)) C (4 tablespoons light soy sauce, 4 tablespoons mirin) [Directions] 1. Peel the lotus root. Roughly chop half of it and grate the other half. ② Finely chop the mitsuba. ③ Thinly slice the leeks diagonally. Cut the shiitake mushrooms, removing the roots. Roughly tear the enoki mushrooms, removing the roots as close as possible to the base. Cut the fried tofu into approximately 2cm wide pieces. ④ Put the ground chicken and ingredients A into a bowl and knead with your hands. Once sticky, add the chopped lotus root and mitsuba and mix thoroughly. ⑤ Put ingredients B into a pot and heat. Once boiling, roll up ingredients ④ and add them. Simmer over low heat, then remove from heat. ※The recommended cooking time is approximately 3 minutes. ⑥ Season with ingredients C and add the ingredients from ③ and simmer until cooked through. Add a little salt to taste. Add the meatballs from ⑤ and add them back in. Add the grated lotus root and cook, stirring constantly. Once thickened, sprinkle with black pepper and yuzu peel and serve. ■Burnt Butter and Green Onion Chicken Hot Pot (Serves 2-3) [Ingredients] 1 chicken thigh, approximately 300g Chinese cabbage, 4 shiitake mushrooms, 1 long green onion, 1 block of firm tofu, 1 clove of garlic, 350cc chicken bouillon or chicken stock, a little chili oil, potato starch to taste, 15g butter, a little olive oil, a little salt A (2 tablespoons soy sauce, 3 tablespoons cooking sake) [Preparation] 1. Roughly chop the Chinese cabbage. 2. Cut the shiitake mushrooms in half, removing the roots. 3. Separate the green onion into white and green parts. 4. Finely chop the green part. 5. Slice the white part diagonally. 6. Finely chop the garlic. 7. Cut the tofu into large pieces. 2. Cut the chicken into large bite-sized pieces and sprinkle with a little salt. 3. Put 15g of butter in a frying pan and heat it. Add the green part of the green onion and garlic. Add a little olive oil and fry slowly. *Approximately 3 minutes. Remove from the frying pan once the onions are browned. 4. Add a little olive oil to the same frying pan and coat the chicken in potato starch. Start by frying the chicken flesh-side down. Add the shiitake mushrooms halfway through, sprinkling with a little salt and frying together. *Add more olive oil if you run out of oil. 5. Once the chicken has firmed up somewhat, flip it over. Remove from the frying pan once the edges are browned. *It doesn't need to be cooked all the way through. Remove the shiitake mushrooms once they've browned. ⑥ In the same frying pan, add chicken bouillon or chicken stock (400cc). Add the chopped ingredients, the chicken and shiitake mushrooms from step ⑤, and the charred green onions from step ③. Pour in a little chili oil, cover, and simmer until the ingredients are cooked through. ⑦ Add ingredients A, cover, and simmer for another 5 minutes.
