Gradually add the flour and knead until you get a soft, smooth dough that doesn't stick to your hands. After kneading the dough, cover it and let it rise for about half an hour. Divide the risen dough into 4 equal pieces. Cover with a clean cloth and let it rest for 15 minutes. Then take one piece of dough, lightly flour the top and bottom, and roll it out as thinly as possible with a rolling pin. Grate the cold butter over the dough. Alternatively, you can melt the butter and brush it on. If you're using grated Kashar cheese, sprinkle it over the dough at this stage. Roll up the dough and then twist it around its own axis to form a round shape. Prepare all the dough in this way. Roll out each pastry again and place it on a baking sheet lined with parchment paper. Score the top with a fork and brush with egg. Bake in a preheated oven at 200 degrees Celsius for 20-25 minutes. Let it brown nicely on top and bottom. Cover the baked pastry with a cloth and let it rest for 15 minutes. Then slice and serve.
