MENU: Crudite: carrots, celery, cucumber, baby corn, radishes, peppers Crisps & Dip Moroccan Lamb Moroccan Vegetables, cous cous, goat’s cheese Fennell Gratin New Potatoes and Mint Orange Green Beans Heritage Carrots Hot Cross Bun Pudding Rhubarb Crumble RECIPES: Famous Guacamole: Red Onion , Avocados, Cherry Tomatoes, Coriander, Lime Juice, Tabasco, Salt and Pepper. Chop onions finely. Scoop avocados into a bowl and chop for a chunky guac. Finely chop cherry tomatoes and pop them in. A good lashing of tabasco and lots of salt& pepper. Squeeze your lime juice & chopped coriander. Make sure it is all incorporated without smooshing the avocado. Serve into your bowl and top with coriander & a whole chilli for decoration. Moroccan Lamb: Rub your lamb shoulders with apricot harissa, cumin, cinnamon and oregano. Place 500ml of chicken stock at the bottom of the dish. Wrap the dish tightly and place in the oven at 210 for half an hour. Then, cook low and slow at 150 for a further 3 hours. REST!! Shred lamb once done, top with pomegranate seeds and flaked almonds on a bed of lambs lettuce. DELISH. Fennell Gratin: Par boil Fennell, pour over double cream and lashings of gruyere. Bake until the gruyere is golden and bubbly. Crumble: Chopped apple & rhubarb with 4tbs of port, sprinkle of golden caster sugar, hint of vanilla essence in a saucepan. Stew on low heat for 10 mins until it is soft but not mushy. For topping, rub flour, butter & sugar between your fingers.
