Kefir di zenzero - Il kefir d'acqua senza grani (con Ginger Bug)

Ginger kefir with Ginger Bug, or how to make a sort of water kefir without obtaining tibicos, or water kefir grains. Water kefir is very demanding; you have to make it every day or so, non-stop, with the constant risk of losing the grains. The grains also reproduce excessively, creating the problem of excess. So, since ginger bug is an excellent starter for fermented drinks and is as rich in probiotics as kefir, I thought, "Why not use it to make kefir?" The advantage of this starter is that when you don't want to make kefir, you can simply store it in the refrigerator and refresh it once a week or even every 10 days to keep it alive. But what happens if you forget it? At worst, it will deteriorate and you'll need to start with a new starter that will be ready in 5 days, without panicking about getting new grains.
