Marinated Trout INGREDIENTS Serves 2 400g salmon trout 50ml white wine 20g honey 10g vinegar 1 lime 1 orange 4 baby carrots 10 spring onions ½ red bell pepper ¼ daikon radish Ginger (to taste) Salt and pepper PREPARATION Fillet the trout and cut it into fillets. Sear them in a pan on both sides until a crispy crust forms. Leave the center pink. In a shallow bowl, mix the white wine, honey, vinegar, and lemon and orange juice. Place the trout in the bowl and let it marinate while the vegetables cook. Chop the vegetables and sauté them in oil in a wok. Pour the trout marinade over them and cook for a few minutes with the lid on. Finish cooking when the vegetables are tender but still firm to the bite. Plate the trout supreme on top of the garnish and its sauce.
