For those unfamiliar with them, they're thin, savory fritters made with chickpea flour, water, salt, and parsley. 🥣The preparation is simple even if there are steps that must be paid attention to to obtain a perfect result and that is: mix water and flour without forming lumps, thicken the mixture on low heat and the time necessary to obtain a firm but easy to roll out polenta. ‼️ Generally it should be spread on a marble or steel surface, but if like me you don't have one you can use my upside down pan method (there are those who pour it into the plumcake mold and then cut it once it has cooled but I prefer to roll it out because in the first case it takes much longer to cool, you wouldn't be able to cut it thinly as tradition dictates and then it retains more moisture). 🫓 Paired with the typical bread you see in the video, mafalde, the legendary "pane e panelle" (bread and panelle) is born, a specialty that's part of Sicilian street food, especially in Palermo.
