I Show How To Make Pastalaya From Scratch. It's So Damn Delicious! Here's My Pastalaya Recipe For 70 - 100 People. If You Want A Smaller Pastalaya Just Break The Recipe Down Into Fourths. P.S (This Is The Same Way To Cook A Jambalaya Except You Substitute The Pasta With Rice And You Have To Be Very Accurate With The Water) Here's My Jambalaya Recipe: • Jambalaya Recipe Ingredients: 12 lbs of noodles 15 lbs of pork temple meat or pork butt 9 lbs of Veron sausage 24 medium onions = About 10lbs -+ 48 cups of water = 3 gallons of water 3 lbs of Jack Morrell Hardwood Smoked bacon Tony's Cherchrie to taste Garlic powder to taste First thing first... Get the pot hot and throw in the bacon. Cook the bacon til it's crispy then take it out the pot. You can throw it away or eat it. I like to eat it because there's no other bacon like black iron cooked bacon. Next add the 15 lbs of seasoned meat into the hot bacon grease. I like to season the meat before I cook it because it helps with the graton on the bottom of the pot. Which predicts the color of your Pastalaya. Let the meat stick a little then stir. Keep doing this until you have the graton at the bottom but don't over cook your meat. Take the meat out the pot. Next add the sausage and brown the sausage just a lil bit. Not to much are you will cooked the flavor out. Take the sausage out the pot. Then you want to add the onions and scrape the bottom of the pot to get all the graton off the bottom. If you don't think it's going to be brown enough then add a little kitchen bouquet. stir it up real good then add some water so the onions don't stick. KEEP STIRRING You will need to keep adding water as it cooks out because onions need to be cooked til they are mushy. Once onions get to that point you want to add all the meat back in the pot and stir it up really good. Cook it all together for about 10 mins. Finally add the 3 gallons of water to the pot. Now add the seasoning a little at a time then taste to see if it's good. After you get it tasting like you want it let it come to a hard boil. Break noodles in half and put them in the pot. BE SURE TO CONSTANTLY STIR SO NOODLES DON'T STICK. Bring water back to a boil then turn fire down so it's just bubbling. Cook til the noodles are done. Check by pulling a noodle and eat it. By then all the water should be cooked out. If water gets low and noodles aren't finish then add more water so the noodles can finish cooking. Once the noodles are done turn off the fire and cover pot for about 15 mins.
