Pork Tenderloin on the Griddle with Garlic Spinach and Alfredo
Today we're getting fancy with fried pork tenderloin on the griddle with sautéed garlic spinach and homemade Alfredo wine sauce! Who says you can just make cheesesteaks and fried rice on your Blackstone or Camp Chef flat top grill?! This pork tenderloin on the griddle is based on a fantastic Italian dish that I had while on vacation recently. This real-deal, hole in the wall Italian restaurant had the absolute best Alfredo sauce that was made with white wine. Start by cutting your pork tenderloin into medallions about 2 inches thick, and then pound them flat. (Look below for a link to the meat mallet I used!). Then, lightly season your pork cutlets with salt, pepper, garlic powder, and Italian seasoning before breading them with a light coating of Italian breadcrumbs. Cook a few slices of bacon on your flat top grill. Then, remove from the griddle, chop, and set to the side. Be sure to leave all of that good bacon grease on the griddle, because that's where you'll fry the pork tenderloin. Add a bit of olive oil or avocado oil to the bacon grease, and shallow fry your pork tenderloin medallions. While the pork is cooking, you can work on the Alfredo wine sauce. Add about 2 tablespoons butter and 2 tablespoons garlic to a large cast iron skillet that has been preheated on the surface of the griddle. Allow the garlic to cook a bit and become fragrant, then add 8 oz. of heavy cream to the skillet. Stir to combine. Once the cream reaches a very low boil, remove the skillet from the heat and add in about 1 cup of parmesan cheese. Stir to combine. Put back on the heat and bring back to a low boil. When it starts to boil, add about 1/2 cup of white wine and stir well. Take off the heat and set to the side. The sauce will thicken as it cools. Lastly, saute some fresh baby spinach in garlic and butter until done.
