Ingredients: For the filling: 1 tablespoon olive oil 3 slices of bacon, cut into strips 1 chopped onion 3 cloves of minced garlic 1 tablespoon Za'atar (spices) 6 chicken livers 100 grams of raisins 2 chopped chives Chopped cilantro to taste 200 grams of butter 300 grams of breadcrumbs Salt and black pepper to taste For the quail: 4 boneless quails Salt and black pepper to taste Thyme and bay leaves to taste 4 cloves of garlic, sliced 2 tablespoons olive oil 4 slices of bacon 1 red onion, cut into wedges 12 cherry tomatoes 1 tablespoon port wine 1 tablespoon balsamic vinegar For the sweet potatoes: 2 sweet potatoes Salt and black pepper to taste Instructions: For the filling: Sauté the bacon in olive oil. Add the onion and minced garlic and let it sweat. Add the chicken livers seasoned with salt and pepper and let them toast. Add the raisins, cilantro, and chives. Season with za'atar and add the butter. Gradually add the bread and mix well. Set aside. For the quail: Season the quail with salt and pepper. Add the garlic, thyme, and bay leaf and coat with olive oil. Let marinate for 15 minutes. Then, it's time to stuff! Wrap each quail in a slice of bacon and close the legs with a toothpick. Place in a baking dish with the marinade, port wine, balsamic vinegar, and onions. Bake at 200 degrees Celsius and, after 20 minutes, add the tomatoes. Bake for another 10 minutes. For the sweet potatoes: Boil the potatoes in salted water. Let cool and cut into slices. Fry in soybean oil until crispy. Drain and season.
