Is it their creaminess, their delicious flavor, or their irresistible crispy coating? Mmm… yes, that too, but what truly elevates them to galactic glory is that they're our mothers' recipe. Specifically, Montse Sanz's, mother of food critic Jordi Luque, with a few contributions from my own mother, María Carmen Iturriaga. Such a formidable combination was bound to produce chicken croquettes that could rival even the best ham croquettes.
