Black Heritage Festival | A Taste of Louisiana with Chef John Folse & Company (1996)

Chef Folse visits the Black Heritage Festival in Lake Charles and prepares smothered seven steaks and black eyed pea congre. Kathe Hambrick, the curator of the African-American History Museum at Tezcuco Plantation in Ascension Parish, is John's studio guest. In this episode from the “Fairs & Festivals of Louisiana” series of “A Taste of Louisiana” from September 28, 1996, Chef John Folse visits the Black Heritage Festival in Lake Charles. In the kitchen, he cooks Braised Seven Steaks and Black-Eyed Peas. He also prepares Lizzie Cookies and discusses African American culture and the history of slavery with Kathe Hambrick, the director of the River Road African American Museum at Tezcuco Plantation in Donaldsonville.
