Got beef and rice in the mood? Rita Lobo prepares a delicious recipe for karê, a delicious Japanese stew that pairs perfectly with gohan, a sticky Japanese rice. This version of the dish is prepared with beef, potatoes, and carrots and also uses one of the key ingredients of Asian cuisine to counterbalance the spicy flavor of the spices: grated, sautéed apple, which adds acidity and a special sweetness to the dish. #Recipes #RitaLobo #PracticalCooking Ingredients For the stew: 600g of beef (pork) 2 potatoes 2 carrots 1 onion 1 small apple 2 cloves of garlic 1 tablespoon of grated ginger 1 liter of water 1 tablespoon of soy sauce 2 1/2 tablespoons of oil 2 tablespoons of curry powder Salt and freshly ground black pepper, to taste 2 1/2 tablespoons of cornstarch Sliced green onions, to taste, for serving For the rice: 1 1/2 cups of Japanese rice (long-grain rice for Asian cuisine) 3 cups of water White sesame seeds, to taste, for serving Preparation For the rice: Cut the beef (pork) into cubes of about 3 cm (1/2 inch) — discard any excess fat. Keep the meat at room temperature while preparing the other ingredients—it shouldn't be cold when it's ready to add to the pan. Peel and finely chop the onion and garlic. Wash, quarter, and discard the seeds of the apple. On a plate, pass each piece through the fine side of a grater, using the peel as a hand guard. Preheat the pressure cooker (without the lid) over medium heat. Drizzle with 1 tablespoon of oil and add the meat in batches, avoiding crowding—adding it all at once will steam instead of browning. Season the meat with salt and cook for about 5 minutes, stirring occasionally to brown all sides. Transfer the browned meat to a bowl and repeat with the remaining cubes, basting the pan with oil and seasoning with salt after each batch. Keep the pan over medium heat, drizzle with 1/2 tablespoon of oil, and sauté the onion with a pinch of salt for 2 minutes, until softened. Add the grated apple (with the broth), ginger, soy sauce, and curry powder and sauté for another 2 minutes. Return the meat to the pot, pour in the water, season with 2 teaspoons of salt and pepper to taste, and mix well. Cover and increase the heat. When the pot starts to whistle, reduce the heat and let it cook for 25 minutes. Meanwhile, prepare the remaining ingredients. Wash and peel the potato and carrot. Cut the potato into 2-cm pieces. Cut each carrot into quarters lengthwise and cut each piece into 1-cm slices diagonally. After 25 minutes of pressure cooking, turn off the heat and carefully cool the pot under running water until steam stops coming out of the valve. Note: The water should only come into contact with the smooth surface of the lid. Open the pot, add the potato and carrot, and stir gently. Cover and return the pot to high heat. Once the pressure returns to the boil, reduce the heat and let it cook for just 5 minutes. Turn off the heat and be careful: let all the steam escape before opening the lid. Meanwhile, in a small bowl, combine the cornstarch with 3 tablespoons of water. Add this mixture to the stew and return the pot (without the lid) to high heat. Cook for about 6 minutes, stirring occasionally, until the broth thickens. Serve immediately with sliced scallions, pickled ginger and vegetables, and Japanese rice. For the rice: In a colander, rinse the rice under running water until the water runs less white—washing is essential to keep the grains sticking together. Transfer to a small saucepan and cover with water. Cook over medium heat and cook for 10 minutes, until it begins to boil. Reduce the heat and cook for another 10 minutes with the lid ajar, or until the rice has absorbed all the water—it will be slightly moist and stick together. Turn off the heat, cover the pan, and let the rice finish steaming for another 5 minutes. When ready to serve, sprinkle with white sesame seeds.
