Gradually add 80 g sugar and whip until stiff peaks. In a saucepan combine coffee, apple purée, sugar, vanilla, and agar agar. Cook over medium heat, stirring constantly, until the mixture starts boiling. Slowly pour the hot coffee mixture into the whipped egg whites while continuously mixing. Pipe the mixture using a piping bag or transfer into a mold. Let stabilize for 40–60 minutes.
