THE RECIPE Mary Todd Lincoln’s Almond Cake Recipe: 1 cup (226 grams) salted cultured butter, room temperature 2 cups (400 grams) granulated sugar, divided 1 cup (235 grams) whole milk, room temperature 1 teaspoon vanilla extract 1 teaspoon almond extract 3 cups (360 grams) all-purpose flour 1 teaspoon baking soda 2 teaspoons cream of tartar 1 cup (142 grams) blanched almonds 6 large egg whites, room temperature Confectioners sugar 1. Heat the oven to 350F. Grease and flour a 9-inch round cake pan 2. Cream the butter and 1 cup sugar until light and fluffy 3. Combine the milk with vanilla and almond extract. 4. Sift the flour, baking soda, and cream of tartar 3 times. 5. Add to the creamed butter and sugar in three batches, alternating with the milk mixture. 6. Fold in the almond flour. 7. Beat the egg whites and remaining 1 cup sugar until stiff. Fold into the batter in three batches. 8. Pour batter into the prepared cake pan. Bake for 1 hour or until a toothpick comes out clean 9. Turn over on a wire rack to cool.
