Every Saturday and Sunday, from 4 pm to 12 midnight, this vibrant marketplace transforms into a symphony of aromas, sights, and sounds, enticing visitors to immerse themselves in Cebu's rich culinary heritage. As we ventured into Sugbo Mercado, our senses were immediately captivated by the tantalizing aroma of grilled meats and the lively chatter of vendors and patrons. Our first culinary stop was at a stall specializing in Lechon, the iconic roasted pig dish that has become a symbol of Filipino cuisine. The glistening skin, the succulent meat, and the explosion of flavors were an absolute delight to our taste buds. Next, we dared to try Balut, a fertilized duck egg that is considered a delicacy in the Philippines. While the initial apprehension was palpable, we took a deep breath and braced ourselves for the unique culinary experience. The combination of the soft, flavorful egg and the slightly developed duckling was a testament to the adventurous spirit of Filipino cuisine. Our culinary journey continued with Sisig, a sizzling dish made from chopped pork ears, cheeks, and liver, seasoned with onions, chili peppers, and calamansi. The contrast of textures, from the crispy pork ears to the soft liver, and the symphony of flavors were an explosion in our mouths. Beyond the tantalizing flavors, Sugbo Mercado also offered a glimpse into the rich tapestry of Cebu's culture. We wandered through stalls brimming with handcrafted souvenirs, each piece a testament to the artistry and creativity of the local artisans. The vibrant colors, intricate designs, and unique materials spoke volumes about the cultural heritage that has been passed down through generations. Our hearts were filled with gratitude for the unforgettable gastronomic experiences and the cultural immersion we had just experienced. Sugbo Mercado stands as a testament to the vibrant spirit of Cebu, a place where food and culture intertwine to create an unforgettable experience for every visitor.
