Coconut tapioca pearl dessert/ chewy tapioca coconut milk/Thai dessert recipe
Today we're making coconut tapioca pearls. It's tapioca pearls in coconut milk. we called "Saku nam ka ti" basically in Thailand we cook tapioca flour pearls in coconut syrup, but today I'm going to make a ball from tapioca pearl so that you can get more texture, be chewy and a creamy taste of coconut milk as you chew. Click here to learn::: https://bit.ly/39e0Re1 Ingredients 1 cup Water 1 cup Sugar 250ml Coconut milk 1/2 cup Sugar 1/4 teaspoon Salt Pandan leaves (as needed) 1/2 cup Tapioca (each ) 1/2 cup Water + Food color (each) any color you like. ***There's nothing too complicated to do in this recipe, so you need 1 cup of sugar and 1 cup of water cook on medium heat, add a bundle of pandan leave basically we like to add it in dessert, it's sweet scent (so don't worry if you cannot find it in your area). Ok, you don't have to bring to a boil, just let it's simmer and the sugar is dissolve then remove from the heat, set it aside. *** To make coconut milk syrup use the same pot put 250ml of coconut milk ( any brand you like) give it a shake first before using it, add 1/2 cup of sugar, 1/4 teaspoon of salt and pandan leaves. let it's simmer until all of sugar is dissolved then remove from the heat, set it aside. *** To make the ball you need 1/2 cup of tapioca pearls and 1/2 cup of color water. I mix red syrup with hot water( Sala flavor, Sala is a kind of fruit in Thailand) . For green color I use green syrup ( cantaloupe flavor ) mix with hot water and yes about 1/2 cup of each color , For purple color this is a grape flavor. These syrup I use are Hale's blue boy brand you can look for them at your local Asian maket. However you can substitute food color is fine , then let them soak for about 15-30 minutes so that when they are cooking they will heat easily though inside the ball to cooked them better if you don't soak with water they may not cooked well inside. *** Once the time is up you would see the water is absorbed in the tapioca pearls, give it a stir then add 1 tablespoon of tapioca flour, then mix it up. Once you see the batter is starting to stick together like this, it's ready to go. I'm going to making a ball when you are shaping the ball do not push to hard, try gently shaping and do the same thing until you finish all of them. It's take me about 20 minutes. *** To cook the ball I have some water in a pot bring it to a boiled ( make sure your water is boiling if not your ball won't cooked and be mushy ). Then add the ball a little at a time so that they don't stick together , once they are finished cooking they would be floating on top of the water then let them cooking 1 more minute, then take them out, then soak them with cold water about 2-3 minutes or while they are soaking you can also continue cook the rest as well. After they are soaked you would see they look like this, to protect them sticky together, add the syrup that we made the first time. Add just enough for these balls, give it a stir then set it aside. For other color you just do the same things but don't have to change water. It won't mix the color, let's take a look at this green one they still look green, yes add syrup then set it aside. You can make only one color or several color as you like, so we have finished all of colors. *** When serving I'm going add a few toppings that we like to add in Thai dessert but you know, we have a lot. I just choose what i like. Ok, this is palm's seeds in syrup so look at that, it's heavy syrup and absolutely sweet, but you will get different textures in the same can some are soft and some are firm but have a light smell and this one jackfruit in syrup it's smells good. I'm going to mix all three colors together, give it a stir put into a bowl, mix it up then add coconut syrup in. For another one, I'm going to add red and green color for this one I'm going add the topping in, jackfruit and palm's seeds then coconut milk syrup in. Last one I'm going add purple color with palm's seeds, coconut milk syrup in and sprinkle with toasted sesame seeds ( I recommend making it fresh, it's better) Thank you so much for watching my video I would appreciated you guy subscribing to my channel and every comment can help me to improve my channel.
