This is for sure the easiest vegan cheese you will ever make - also very delicious, gooey, meltable, and stretchable you are not going to believe it :) The easiest gooey meltable vegan soft cheese ever! oil-free, nut-free! CJ INGREDIENTS: 1 1/2 cup of cooked cassava roots 1/2 cup of unsweetened plant-based milk 1/2 tablespoon of lemon juice or apple cider vinegar salt to taste 1 teaspoon of onion powder 1 tablespoon of olives brine (or 1/2 tablespoon of nutritional yeast) METHOD: Cook the cassava roots in water and a pinch of salt until soft. Usually takes about 15 minutes in the pressure cooker.
