Kanshoi in Manipuri is a healthy vegetable stew usually prepared with seasonal vegetables and fresh water fish or dried or fermented fish or dried meat. The kangshoi that I have prepared here is Naga style, where we have added dried meat, where the broth is light and incredibly nutritious and definitely slow cooking will always do the trick to an otherwise humble dish.
