A Whole Bull in Glass Jars | Butchering & Slow-Cooking to Preserve on an Alpine Farm
Follow one full summer day — and night — on an alpine farm as three generations of one family butcher a whole bull and preserve every cut in glass jars cooked over an open wood fire. Watch the grandfather sharpen the boning knife and cleave the shoulder sections with decades of practiced ease. The grandmother trim, season and taste at every stage — one more pinch of salt, always exactly right. The granddaughter fill each jar layer by layer, seal each lid with a firm twist, and carry the finished row of glowing amber jars into the cellar where winter's meat will wait.
