The most commonly found in supermarkets are Wakayama and Kishu plums, and perhaps even the premium "Nanko Ume" among Kishu plums. Wakayama Prefecture is a major producer of umeboshi, boasting over 50% of the national market share. So, just how big is ume production, and how different are the authentic Wakayama plums?
