Pretty in pink: Lithuanians celebrate traditional cold beetroot soup | ABS-CBN News

Lithuania's capital Vilnius turned pink on Saturday as the city celebrated a traditional cold beetroot soup beloved by Lithuanians in summertime. 'Saltibarsciai' generally features grated beetroot and cucumber mixed with a kind of yogurt called 'kefir', and garnished with boiled egg and chives or dill. It is often served with hot potatoes. Visitors to 'Pink Soup Fest' took part in a double record attempt for the most people eating saltibarsciai at once at the longest table. 1,200 diners sat at a table 362 meters long. "We cannot live any day in the summertime without that soup," said Dovile Aleksandraviciene, the CEO of Vilnius' development agency. Chef Rita Kersulyte said saltibarsciai was the one thing all Lithuanians could agree on. "It's the best soup we have," she said.
