Today I'm going behind the scenes at the production of one of Spain's finest olive oils, from the Montes de Toledo region. Made with Cornicabra olives, it boasts a protected designation of origin. Today I'm in Navahermosa, witnessing the entire process, from harvesting the olives in the groves to bottling, until it becomes a product bearing the La Galinda brand. Along the way, at the mill, we discover how the olives arrive, still with leaves and branches, and are separated and cleaned in a process where the utmost care is taken with the fruit.
