Super Moist Bran Muffins With Raisins and Pecans!!! The Best Tasting Bran Muffins!

These bran muffins are packed with so much flavor! They have raisins, lots of bran, nuts, and a nice sweet flavor. Bran muffins are my moms favorite and she has approved these! Plus they are super soft and moist! SUBSCRIBE:    / @haileyscontrino   INSTAGRAM:   / haileyscontrino   TIKTOK: @haileyscontrino FACEBOOK: @haileyscontrino Bran Muffins with Raisins and Pecans Ingredients: Bran flakes (or Fiber One cereal): 1 ¼ to 1 ⅓ cups crushed (approx. 3 cups before crushing to achieve this amount) Raisins: ½ cup (75 grams) Milk (buttermilk or regular): 1 ⅓ cups (320 ml) Vanilla extract: ½ teaspoon All-purpose flour: 1 ¼ cups (156 grams) Brown sugar: ½ cup (100 grams) Baking powder: 3 teaspoons Salt: ¼ teaspoon Egg: 1 large Vegetable oil: ¼ cup (60 ml) Honey: 2 tablespoons Chopped pecans (optional): 1 cup (120 grams) Instructions: 1. Start by preparing your bran flakes or Fiber One cereal. If using bran flakes, measure about 3 cups and then crush them until you have 1 ¼ to 1 ⅓ cups of crushed flakes. Place the cereal in a sealed bag and crush until fine. 2. Transfer the crushed cereal to a large mixing bowl. Add the raisins, milk, and vanilla extract. Stir to combine, then let the mixture sit for about 5 minutes to soften the cereal and plump the raisins. 3. Preheat your oven to 400°F (200°C) and grease a muffin pan. 4. In another bowl, combine the flour, brown sugar, baking powder, and salt. Mix these dry ingredients well. 5. After the cereal mixture has soaked, add the egg and oil to it, mixing thoroughly with a fork. 6. Gradually add the dry ingredients to the wet ingredients, switching to a spatula to fold everything together gently. If the mixture is too thick (especially if using buttermilk), you may need to add a little more milk to achieve the right consistency. 7. Stir in the honey, then gently fold in the chopped pecans if using. 8. Scoop the batter into the prepared muffin pan, filling each cup nearly full. 9. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with moist crumbs attached. 10.
