Creamy Canjica with Coconut Milk and Paçoquinha (Peanut Candy) If you love a creamy and flavorful canjica, this recipe will win your heart! Made with coconut milk, grated coconut, and finished with paçoquinha, it's irresistible and perfect for any time of year. 📝 Ingredients 1 cup of canjica (hominy) Water for soaking the canjica ½ liter of water 3 tablespoons of sugar ½ liter of milk 1 can of coconut milk 1 cup of condensed milk ½ cup of grated coconut 3 cinnamon sticks 1 paçoquinha for decoration 👩‍🍳 Preparation method Soak the canjica in plenty of water overnight. The next day, discard the soaking water. Place the canjica in a pressure cooker with ½ liter of water and add the 3 tablespoons of sugar. This helps the canjica absorb the flavor better and become even sweeter. Cover the pot and cook for 20 minutes after it comes to pressure. Turn off the heat, wait for the pressure to release naturally, and open the pot. Add the milk, coconut milk, condensed milk, grated coconut, and cinnamon sticks. Cook over medium heat, stirring occasionally, until the broth thickens and the canjica (Brazilian corn pudding) becomes very creamy. Transfer to a serving dish or bowl and finish by crumbling a paçoca (peanut candy) on top. ✨ The result is an extremely creamy, very sweet canjica with an incredible flavor. I'm sure you'll love it!
