Most importantly, its crystal clear! The beauty of this recipe is that it can also be made alcohol free, or you can add whichever spirit you fancy. Vegan Clarified Milk Punch: Ingredients- 1/2 a sleeve of vegan graham crackers ( I used Nabisco) 2.5 cups of lite coconut milk 10 -12 key limes zested and juiced 1/2 cup of pineapple juice 2 cups of vanilla coconut black tea 3 oz homemade falernum (or 4-5 oz store bought falernum) Method- Soak graham crackers in coconut milk to make the cereal milk for 30-45 mins, Strain out graham crackers. Zest and juice 10-12 key limes (yield of 1/4 cup of juice). Juice pineapple. Brew 2 cups of vanilla coconut black tea Heat graham cracker infused coconut milk till it begins to simmer. One it simmers, turn off heat and add lime juice, whisk to combine- then add in pineapple and tea. Let cool completely and rest in the refrigerator for up to 24 hours. Add Falernum and pour punch through a nut milk bag (and or ultra bag) into a bowl. Once the punch begins to run clear, change bowl and run the punch through again and agin until punch becomes crystal clear. Cocktail: 1.5 vegan clarified milk punch .25 simple syrup 1.25 Pisco (or spirit of choice) Stir and serve over a large ice cube in a rocks glass alongside vegan meringues!
