I recently upgraded my Kitchen Aid mixer to the Famag IM5S Spiral Dough Mixer! Combine Ingredients 2. Mix until in one smooth dough ball 3. Knead for 5-10 minutes 4. Proof in an airtight oiled tub, Room Temp for 3 hour 5. Measure out 6 equal balls (260g each) and shape into balls 6. Proof for a further 48 hours in the fridge 7. Remove dough from fridge and bring to room temp (2 hours) 8.
