I smoked chicken quarters on the Weber Searwood rotisserie attachment and they came out absolutely delicious. Stand aside rotisserie restaurants, this recipe was just as good if not better than anything I've had before. Savory, smoky, juicy, and tender, I couldn't have been happier with the outcome of this cook. Of course, searing the chicken quarters for a couple minutes BEFORE putting them on the rotisserie is unique, and well worth it. Pat dry your chicken quarters 2. Rub chicken with vegetable oil 3. Apply kosher salt to chicken (to taste) 4. Apply seasoning liberally to all sides of chicken 5. Heat two cups vegetable oil on stove at high 6. Reduce stove to medium-high 7. Sear the chicken in the pan, two minutes per side 8. Mount chicken on your rotisserie (or just on the grill grates if you don't have a rotisserie) 9. Grill at 400 degrees for approximately 1 hour 10.
