How to Make Epis! The Haitian Secret to Flavor
Epis is the Haitian secret to flavor. It's a green seasoning base used to marinate meats, season beans, rice, soups, and just about everything. It's responsible for giving Haitian food its unique flavor. In this video, I’ll show you how to make epis step-by-step. I go through the process of making epis by chopping up and blending together various vegetables and herbs like scallions, leek, parsley, bell peppers, hotter peppers, onions, garlic, thyme, and more. The epis can be stored in the fridge for a month or in the freezer for up to six months. Ingredients (Big Batch) • 2 bunches scallions (about 12 stalks) • 1 large leek (white + light green parts only) • 1 large bunch parsley (about 2 packed cups) • 2 green bell peppers (seeded) • 1 red bell pepper • 2 habanero peppers + 1 scotch bonnet pepper (adjust for heat) • 2 medium onions • 3 shallots • 2 whole heads garlic (about 20 cloves) • 8–10 sprigs fresh thyme (leaves stripped) • 1 cup olive oil (or half olive oil, half neutral oil) • 8–10 whole cloves (or ½ tsp ground cloves) • Juice of 3 limes • 2 Tbsp apple cider vinegar • 2 bouillon cubes (Use Not-Chicken for a vegan-friendly version but regular chicken bouillon works too) • 1 Tbsp kosher salt (adjust to taste) • 1 tsp black pepper Directions 1. Wash your vegetables – Rinse scallions, leek, parsley, and peppers under cold water. Soak in a bowl of water with a splash of vinegar and a pinch of baking soda for about 10 minutes. Drain well. 2. Chop – Roughly chop all vegetables and aromatics so they blend easier. 3. Blend – Add everything into a blender or food processor in batches. Pour in the olive oil, lime juice, and apple cider vinegar to help it blend smoothly. 4. Adjust – Taste and adjust seasoning (more salt, pepper, or parsley depending on balance). 5. Store – Transfer epis into glass jars. • Fridge: lasts 3 weeks to a month (drizzle olive oil on top to seal). • Freezer: lasts up to 6 months (freeze in ice cube trays for easy use). Use epis to marinate chicken, pork, fish, or beef, and to season beans, rice, stews, and soups. It’s the foundation of Haitian flavor.
