Savory Vegetable Pancakes (Savory Vegan Pancakes + Gluten-free and Eggless Pancakes)

They are crisp at the edges, tender inside, and made with chickpea flour and sweet potato. Do you remember these 3 bags of sweet potatoes that I received in my grocery shopping a few weeks ago?
