Bafra Style Tirit Recipe Hello food lovers! 👋 Today we're presenting you with the traditional and delicious tirit recipe from Bafra. This special dish, where fresh phyllo dough meets chicken broth and is crowned with butter, hazelnuts/walnuts, will leave an unforgettable mark on your palate. Are you ready? 😉 Ingredients Freshly Rolled Phyllo Dough (amount can be adjusted according to the number of people) 1 Whole Chicken 🍗 Chicken Broth (must be boiling and kept warm on low heat) ♨️ 200 grams Butter (or margarine) 🧈 Hazelnuts or Walnuts (coarsely chopped, according to your taste) 🌰 Salt (should be added while boiling the chicken) Preparation 1. Prepare the Chicken: Separate the whole chicken, which you have boiled beforehand, from the bones and shred it into pieces. Set aside to cool. Keep the chicken broth ready on the stove, boiling over low heat. Make sure you add enough salt to your chicken broth. 2. Melt the Butter: Melt the butter in a small pan and keep it ready. 🧈 3. Cut the Phyllo Dough: Prepare the fresh phyllo dough by dividing each piece into 8. Stack the cut pieces on top of each other and turn them upside down. 4. Wrap the Phyllo Dough: Gently roll each piece of phyllo dough, like a cigarette pastry, not too tightly. Gently squeeze the rolled phyllo dough in your hand and arrange them in a container so that their shape doesn't get distorted. Prepare all the phyllo dough in this way. 5. Create the Tirid: Arrange a layer of rolled phyllo dough on the bottom of a large serving tray. 6. Moisten the Phyllo Dough: Pour plenty of the chicken broth, which you have kept boiling on the stove, over some of the rolled phyllo dough in a bowl. Wait only 2-3 seconds so that the phyllo dough doesn't become too soft or melt. ♨️ 7. Arrangement and Layering in the Tray: Gently press the phyllo dough to drain excess water. Carefully place the phyllo sheets, after draining off the excess water, on top of the layer you previously arranged in the tray. Drizzle melted butter over this phyllo layer. Then sprinkle coarsely chopped hazelnuts or walnuts and spread the shredded chicken pieces. 🌰🍗 8. Repeat the Layers: Repeat the same process (soaking the phyllo sheets in chicken broth, draining the excess water, arranging them in the tray, adding butter, hazelnuts/walnuts and chicken) layer by layer until all the phyllo sheets and chicken are used up. Don't forget to place the last layer of phyllo sheets and add plenty of butter, hazelnuts and chicken on top. ✨ 9. Ready to Serve: Your tiridi is ready!
