A technical challenge inspired by Bake Off Spain, where we work with a tall, fluffy dough, scented with orange blossom water, respecting the tradition shared every January 6th. Ingredients: For the preferment: • 100 g all-purpose flour • 60 ml lukewarm whole milk • 5 g fresh baker's yeast (or 1.7 g active dry yeast) For the final dough: • 400 g all-purpose flour • 100 g sugar • 100 ml lukewarm whole milk • 2 large eggs • 100 g unsalted butter (at room temperature and softened) • 15 g fresh baker's yeast (or 5 g active dry yeast) • 10 g salt • Zest of 1 orange • Zest of 1 lemon • 2 tablespoons orange blossom water (or to taste) • Optional: A splash of rum, anise liqueur, or brandy. For Decoration: • 1 beaten egg (for brushing) • Pearl sugar (or sugar moistened with a few drops of orange blossom water) • Candied fruit (I used oranges) • Blanched almonds, either slivered or whole.
