They are super simple and economical but they have their special touch that will fill you with energy. If you want to know the recipe here you have!: PUMPKIN CREAM: INGREDIENTS: 2 tbsp EVOO (extra virgin olive oil) 1 clove garlic 1 onion (approx. 140 g) 1/8 tsp ground black pepper 1/2 tsp salt (to taste) 290 g of potatoes (3 potatoes) 800 g of pumpkin 200 g of carrot (2 or so) Water For the topping of baked chickpeas we leave you the link to our video:    • 4 SNACKS VEGANOS (RÁPIDO y SENCILLO) | Liv...   · We start by heating the EVOO in a large cauldron. This step is optional. If you don't like cooking with oil, use water instead. · Add the crushed garlic and let it brown. · Add the chopped onion, ground black pepper and salt. Stir and let it cook for 5 minutes, until the onion is poached. · Add the diced carrot, potatoes and pumpkin and stir so that the flavors are integrated. · Cover with water just until the ingredients are covered. Do not add much water so that the cream is not very watery. · Cook over medium heat until the carrot is soft when punctured with a fork. · Turn off the heat and let stand before crushing. · For crushing we use a passeigner, but if you don't have one, you can use an arm mixer, for example. CREAM OF ZUCHINNI: INGREDIENTS: 2 tbsp EVOO 2 cloves of garlic 1/8 tsp ground black pepper 1 tsp of salt (to taste) 1/4 tsp thyme 1 leek (approx. 90 g) 250 g of potatoes (approx 3) 2 bubangos or zucchini (approx 780 g) 200 g of stewed and drained chickpeas 2 pineapples already cooked (corn cobs) We ate it with whole wheat bread, which if you want to make it homemade, we leave you the link to our whole grain bread video with seeds:    • PAN INTEGRAL de SEMILLAS | Living Like A P...   · We start by heating the EVOO in a large cauldron (optional, use water instead) · Add the crushed garlic and let it brown. We find the chopped leek, black pepper, thyme and salt and let it cook until the leek is poached, about 5 minutes. · Then we incorporate the rest of the ingredients: potatoes, bubangos and stewed chickpeas. · Cover with water (not much so you do not run out of water) and let cook until the potatoes are soft. · Add the pineapples cut in half, turn off the heat and let stand a few minutes. · With an arm blender, we crush slowly, removing the pineapples to leave whole.
