Pantry Clean Out Challenge 2026 & Low-Income Meal Planning for Large Family of 8

Hi all! Happy New Year! I had plans of taking part of the 2026 pantry clean out challenge that Three Rivers Homestead does every year, but this definitely wasn't how I envisioned it starting. In the early morning hours we heard a huge crash and it took us hours to locate the source. Turns out our shelves busted. Thankfully, not a single glass jar broke! We had some dented cans and boxes of pre-opened pasta and chia seeds that got squished and opened a bit, spilling some onto the floor. But it all really went as well as could be expected. I organized the shelves and all my ingredients. I really only threw away a couple of items due to experation, and moved a few things downstairs to my studio. I'm amazed at the amount of room I have on the shelves now. Organizing really does give you more space. From there I started meal planning by creating a spreadsheet and cooking up a bunch of side dishes for the week, and popping them into the freezer. Now I really just need to pull a few proteins for the week, get those into the fridge to thaw, and a can of vegetables every night. It doesn't seem like much I know, but having even just a few components ready to go can make meal planning and dinner a breeze.
