Roll de berenjena con pasta de porotos

Eggplant rolls stuffed with bean paste. Few ingredients, easy to make, your family will be eating them without even noticing. INGREDIENTS: For the paste: 50 grams cooked beans 10 chopped walnuts Fresh parsley Cilantro or basil Fresh mint 1 teaspoon garlic powder Juice of 1 lemon 1 tablespoon olive oil Salt to taste To assemble: 1 large eggplant 5 cherry tomatoes Nutritional yeast Olive oil Soy sauce (optional) STEPS: Cook the beans: Soak overnight. The next day: cook until tender. (Or use canned cooked beans.) Make the paste: Sauté beans, walnuts, garlic, and salt for 2-3 minutes. Blend: Transfer to a blender. Add parsley, cilantro, mint, lemon juice, and oil. Blend until smooth. Prepare the eggplant: Slice thinly (3-4mm). Place in a bowl with salt for 30 minutes. Rinse well. Grill the eggplant: Grill or pan on a hot griddle. Cook on both sides until golden brown. Grill the tomatoes: Oven 180°C (350°F) for 10 minutes, until soft. Assemble the rolls: Place a slice of eggplant on a plate, spread with pasta, top with a cherry tomato, and roll up. Finish: Sprinkle with nutritional yeast. Serve with soy sauce.
